1) Spiral mixer: 50 KG spiral mixer and mixing time 25-30 minutes

 it can mix 100KG flour per hour, so after mixing will get 200KG dough.

For example: 600g of toast, 200KG dough can get 333 pcs  toast.

2) hydraulic dough divider machine can be divided at least 3 times per minute, each 20 pcs dough, so 60 times by per hour 60 minutes = 3600 pcs dough.

3) Toast moulder machine output per hour 1000-3000 pcs.

4) proofer: fermentation time one and a half hours

Proofing 32 trays need 1.5 hours, so 3 hours can proofing 64 trays.

64 multiplied by seven equal to 448 pcs toast. With an average of 149 pcs per hour

So fermentation machine should be purchased 2-3 units or fermentation room with 2 trolley.

5) baking: toast baking time is generally 25-30 minutes,

without cover, the top temperature 160 ℃, bottom temperature 220 ℃;

with Cover, the top temperature 200 ℃, and bottom temperature 220 ℃, bake about 30 minutes.

See above table, 16 trays rotary oven per hour can bake 600g toast 224 pcs, 32 and rotary oven can bake 448 pcs per hour, the customer can choose the equipment according to their output.

Baguette production line:



First 400 * 600mm mbaguette baking pan is generally 5 slot, baguette dough is generally 350g-400g.

1) Spiral mixer: 50 KG spiral mixer and mixing time 25-30 minutes

 it can mix 100KG flour per hour, so after mixing will get 200KG dough.

 Then, 350g of the baguette, 200KG dough can get 571 pcs baguette.

2) hydraulic dough divider machine can be divided at least 3 times per minute, each 20 pcs dough, so 60 times by per hour 60 minutes = 3600 pcs dough

3) Baguette moulder machine output per hour 1000-3000 pcs. (50-1250 g)

4) Fermentation: put the baguette pans to the proofer machine of 30 ℃, 75% humidity, fermentation for 60 minutes, after the fermentation is finished, cut in the surface of the dough.

  Proofing 32 pans takes 1 hour, each hour an average of 32 times multiplied by 5 = 160 pcs baguettes.

5) Put the products into rotary oven, top temperature 230 ℃, bottom temperature 200 ℃, after forming color then adjust the top temperature to 180 degree Celsuis, and bottom temperature to 200 degree Celsius, and baking baguette require steam, baking time around 30 minutes.

The steam spray method: Before puting the products spray once, and then spray after every 3 minutes, a total of 3 times.

16 trays rotary oven can bake 16 tray by 5 pcs then by 2 timer equals 180 pcs, 32 rotary can bake 360 pcs per hour, customers can choose diffferent equipment according to their output. 


Production area around 60 square meters.


Bread production line:



First 400 * 600mm standard baking pan generally can bake 12-15 pcs bread, bread bun dough is generally 60g-80g.

1) Spiral mixer: 50 KG spiral mixer and mixing time 25-30 minutes

 it can mix 100KG flour per hour, so after mixing will get 200KG dough.

 So, 70g of the bread, 200KG dough can get 2857 pcs, about 238 pans.

2) Dough divider and rounder machine (automatic / semi-automatic), can also be use automatic rounder manual divider or automatic dividing manual rounding, each minutes can operate at least 3-4 times, each time can divider 30-36 pcs dough, so per hour can be divide (round) 5000-8500 pcs dough .

3) Fermentation: fermentation time is about 1 hour.

Proofing 32 trays needs 1 hour, as we known 16 rotary oven per hour can bake 64 pans bread, 32 rotary rotary can bake 128 pans, so correspondingly 16-trays rotary oven need to match fermentation room with 2 trolley, 32 trays rotary oven match fermentation room with 4 trolleys.

4) Bread baking time about 10-15 minutes.

16 trays rack oven can bake 64 trays bread per hour, 32 rotary oven can bake 128 trays, the customer can choose the equipment according to their output.
